Home or professional chefs looking to upgrade their cutting utensils may be interested in a new life collection launched via Kickstarter this month offering high performance Japanese steel knives with “minimal ascetics”. THRIVE is a five knife collection offering a minimal knife set forged from Japanese VG10 steel. “Our imported Japanese VG10 steel (the “G” stands for “Gold Standard”) is comprised of 1% carbon, for edge retention and sharpness, 15% chromium for stain resistance, and 67 layers of damascus cladding. Each blade is cryogenically treated with subzero liquid nitrogen to reach a Rockwell Hardness (HRC) of 59-60.”
Watch the demonstration video below to learn more about the knife collection which is available to back via Kickstarter with early bird pledges from just $35 for the No.3 pairing knife. Sets of three knives are available from $135 and 5 knife sets are available from $295.
“Inspired by legendary designer, Filippo Perini, each knife is a balance of sleek aesthetic and elevated performance. Every blade starts with a baseline and a single curve. Within the fluid curve, every detail adds is added to provide a sense of dynamic motion and ultimately servers to enhance bottom line performance. “
“Each knife is scaled down to wood and steel – a powerful balance between the natural and the industrial. For enduring performance, each wood handle is infused with resin to increase durability and waterproofing. The result of this process is called pakkawood. Each blade uses high carbon stainless Japanese VG10, which is world-renowned for culinary applications.”
